“Perfectly Chocolate” Chocolate Cake

My baby girl turned 6 yesterday!  It was no surprise at all that she requested a chocolate cake with chocolate frosting, so we set our sights on a cake called “perfectly chocolate” chocolate cake.  It was delicious!  Definitely the perfect birthday cake for my little chocolate-lovin’ girl.

Because Claudia and I have been eating fresh strawberries like crazy, Sam suggested decorating with some … more perfection.  But wait.  We drizzled chocolate sauce over the top too, and just for the record, I’ve lost count of how many times I’ve made this chocolate sauce.  It tastes great with so many things.  But back to the cake.  We’re changing the name of this cake to “Claudia’s Perfectly Chocolate” Chocolate Cake.

When I tucked my baby into bed last night, she said she wished the day would last forever.  Happy birthday, sweet girl. xo

1-3/4 cups all-purpose flour

3/4 cup HERSHEY’S Cocoa

1-1/2 teaspoons baking powder

1-1/2 teaspoons baking soda

1 teaspoon salt

2 eggs

1 cup milk

1/2 cup vegetable oil

3 cups powdered sugar

1/3 cup milk

1 teaspoon vanilla extract

Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.

That is such a gorgeous decorating job.

Who got to lick the beater and spatulas? One lucky person, that’s who.

This is my go-to recipe for chocolate, no doubt. The only changes I make is to sub buttermilk for milk and espresso/coffee for boiling water to enhance the chocolate flavor. You should totally try that out. As is, though, it is an amazing cake!!

    HAPPY BIRTHDAY, CLAUDIA!!!!!

Oh my God this looks absolutely amazing!!! I started drooling when I saw it, haha. Happy birthday to your little lady! Sorry I have been MIA as of late, I miss interacting with you… May was a super busy month, and I am going out of town again next week, but once I get back, I will get back into a normal routine of things! Good to see all’s well!
