Chocolate Chip Cookie Dough Dip

You are never going to believe this, but this cookie dough dip really is kind of good for you!  Unlike my delusional logic concerning the skillet brownie I baked last week, this treat can truly be said to be in the healthy category.  It’s made with chickpeas!  Yes, chickpeas!  It sounds impossible, but I promise you that it’s a nice twist on dessert dip.

And so easy!  You just toss it into your food processor and it does all the work for you.  I very happily used this recipe to christen the new food processor I was lucky enough to win over at The Reluctant Entertainer.  I was so excited to hear that I won, and thrilled when it arrived yesterday.  It is going to see a lot of action.  Thank you, Sandy!

Recipe:  Chocolate Chip Cookie Dough Dip

(slightly adapted from Chocolate-Covered Katie)

1 15.5-oz. can of chickpeas, drained and rinsed
1/8 tsp. salt
1/8 tsp. baking soda
2 tsp. pure vanilla extract
1/4 c. nut butter  (I used almond butter.)
2 Tbsp. milk  (You may add more milk, depending on the consistency you’re looking for.)
2/3 c. light brown sugar
3 Tbsp. old-fashioned rolled oats
3/4 c. mini chocolate chips

Using the blade attachment in your food processor, blend all ingredients except the chocolate chips until smooth and creamy.  Remove to another bowl and stir in chocolate chips.  Serve with animal crackers or graham crackers.

    I would have never guessed chickpeas! Now that is a healthy way to get protein in our desserts.

    I cannot believe this delicious looking (and sounding) dip is made of CHICKPEAS. Part of me thinks it sounds…strange. But the other part of me is DYING to try it!

    chickpeas? crazy! we made a chickpea/ground beef meatloaf the other day that turned out great. so, going to trust you on this one …

    i have a friend who makes chocolate chip cookie dough dip for every gathering we have, and she does NOT use chickpeas. i’m definitely gonna recommend this to her! :)
