Chocolate Cupcakes with Peanut Butter Buttercream Icing
I’ve been having some fun over the past couple months making things in mini. Everything from apple crumb pie to pineapple upside down cake to cupcakes. These are some mini cupcakes I made using the same chocolate sour cream batter from a previous post. This time I topped it with a rich peanut butter buttercream icing. It’s one of those icings that you want to just eat with a spoon. Seriously.
Recipe: Peanut Butter Buttercream Icing
1/2 c. creamy peanut butter
4 1/2 c. confectioners sugar
1 1/2 tsp. vanilla extract
6-8 Tbsp. milk
In a large mixing bowl, cream peanut butter until fluffy. Beat in confectioners sugar and vanilla. Add milk to achieved desired consistency.
