Yellow cupcakes for a baby boy
Easy-Mix Yellow Cupcake
My sweet boy asked if I would make cupcakes for his class so they could have a baby shower for his teacher. He’s got such a big heart. How could I say no to that? Sam was pretty specific about what he wanted for this – the icing had to be blue and I had to make letters to spell out “It’s a boy.”
I followed the Easy-Mix Yellow Cupcake Batter recipe from Elinor Klivans’ Cupcakes! (I love this cookbook!) and topped them with my favorite buttercream icing, tinted blue. For the letters, I melted some white candy melts, spooned it into a small sandwich bag, cut the tip off the bag, and piped the letters and dots onto parchment paper. The candy set up in no time and peeled right off the parchment paper. Very quick and easy.
These turned out cute and they taste good too. And it made my baby happy. : )
Recipe: Easy-Mix Yellow Cupcake Batter

1 1/4 c. unbleached all-purpose flour
1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1 large egg
1 large egg yolk
1 c. sugar
1/2 c. canola or corn oil
1 tsp. vanilla extract
1/2 c. sour cream
Sift the flour, baking powder, baking soda, and salt into medium bowl and set aside.
In a large bowl, using an electric mixer on medium speed, beat the egg and yolk and sugar until thickened and lightened to a cream color, about 2 minutes. On low speed, mix in oil and vanilla until blended. Mix in sour cream until no white streaks remain. Mix in the flour mixture until it is incorporated and the batter is smooth.
Makes approx. 40 mini cupcakes.
(I baked at 325 degrees for 10-12 minutes.)
Recipe: Vanilla Buttercream Icing
1/2 c. unsalted butter, softened
4 1/2 c. confectioners sugar
1 1/2 tsp. vanilla extract
5-6 Tbsp. milk
In a large mixing bowl, cream butter until light and fluffy. Beat in confectioners sugar and vanilla. Add enough milk to achieve desired consistency. Yields about 3 cups.
