Coffee Popsicles

I came across a recipe for Vietnamese coffee popsicles at David Lebovitz’s blog a while back, and I bookmarked it to check out again when warm weather finally graced PA.  Well, warm weather has arrived.  Woohoo!  We’ve hit 70 degrees three days in a row.  It’s time for some coffee popsicles, people!

I just picked up some white chocolate sauce at the Bucks County Coffee counter at the grocery store and I used that in place of the sweetened condensed milk in the original recipe.  It’s a hit.  And it’s fun.  Why should the kids get all the popsicles anyway?

Recipe:  Vietnamese Coffee Popsicles

2 c. strong brewed coffee or espresso

2/3 c. sweetened condensed milk

Mix coffee with milk and pour into popsicle molds.  Freeze.

    I’ve had this recipe bookmarked from David’s blog for a while now. I lve coffee and popsicles, so it’s a win win for me!
