We’re spending the weekend with Grandy and Poppy and we don’t want to show up empty-handed. The kids and I baked Poppy’s favorite apple bread to surprise him. Really, Sam and Claudia did everything. Their favorite part was chopping the apples, of course.
It’s a really easy recipe and quick to toss together. (Unless a 4 year old and a 9 year old are chopping your apples.) I use a bundt pan but you can also use two loaf pans. An amazing aroma just floats through the whole house while this is in the oven. It smells heavenly. I’m pretty sure Poppy will try to hide this from the rest of us, but that’s okay. It’s a treat for him, after all.
Recipe: Apple Bread
3 c. flour
1 1/2 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
2 c. granulated sugar
1. cup oil
1 Tbsp. vanilla extract
2 granny smith apples, peeled and diced
1/2 c. chopped walnuts, optional
1 tsp. flour
cinnamon sugar mixture to sprinkle on top before baking (If I’m baking this in a bundt pan, I grease the pan, then smother it in a layer of cinnamon sugar so that when I turn the cake out, the top has a nice coat of cinnamon and sugar. Otherwise, just sprinkle it all over the tops of the batter in the loaf pans.)
Mix dry ingredients with a whisk and set aside. Beat eggs, sugar, and oil in mixing bowl. Add vanilla and dry ingredients. Stir in apples. Mix walnuts with a tsp. of flour before stirring them into the batter. The batter will be very thick. Spoon into greased bundt pan or 2 loaf pans. Bake at 350 degrees for 50-60 minutes.
