Watermelon Granita & Yogurt Parfait

The kids are back at school, so it kinda feels like Fall is on its way… if I’m in the house.  Indoors, I can imagine a crisp morning or an occasional cool breeze.  But that’s when I’m inside.  As soon as we open the door, we’re hit with a wall of heat somewhere in the 90s.  Definitely not very autumnal.

So what to do?  Make granita.  But not just any old granita.  I’m talkin’ a watermelon granita and yogurt parfait!  (Mom, do you see this?  A parfait.  hehe)  Anyway, this is totally refreshing and I think it would be absolutely delicious with any fruity granita.

I’m working up a sweat typing and need to go cool off with a parfait.  {yum}

{one year ago:  cappuccino brownies}

Recipe:  Watermelon Granita and Yogurt Parfait

(adapted from Cowgirl Chef)

half of a small, seedless watermelon

pinch of kosher salt

8 mint or lemon balm leaves  *(I used lemon balm, which is a lemon-scented mint.)

1 1/4 c. vanilla yogurt

4 tsp. granulated sugar

1/2 tsp. vanilla extract

Cut watermelon into chunks and add to blender, along with a pinch of salt and mint leaves.  Puree until smooth.  Pour into a shallow container and place in freezer.  Every 30-40 minutes, scrape the top with a fork and return to the freezer.  Do this for 3-4 hours.

Whisk together yogurt, sugar, and vanilla.  Assemble parfait by spooning a layer of granita, a layer of yogurt, and another layer of granita.  Top with a dollop of yogurt.

    I’ve never heard of granita parfait! Separately, yes but never together. What a refreshing combination that I would love.

    I wanna know what’s so funny about “parffaits” too!

    I feel the same way about the heat. A couple night ago it was in the 80’s with a breeze and it was wonderful. I can’t wait for cooler temps!

    Sounds so refreshing! I think Fall-ish weather has hit our area. I have been taking tons of walks, it has been so beautiful! This looks so yummy!

    Oh my goodness! Totally ingenious….especially with the lemon balm! I wonder if it would be good with basil? Keep cool over there, lady!
