Snickerdoodle Rice Krispie Treats

A fellow blogging friend, Mike from made by mike, is the brains behind this delicious idea.  I enjoy Mike’s blog – his writing, his beautiful photos, and the recipes he posts.  And I was really tickled the day he posted his take on Rice Krispie treats!  With only the tiniest tweak to the traditional recipe, I ended up with the best cereal treat I’ve ever had.  Seriously.  I ate three right in a row, just to make sure.  My sister will agree, because she made them too, and her family was crazy about them.  The frosting is totally optional here, and to be honest, we preferred them without, but it does make them look like something special.

Recipe:  Snickerdoodle Rice Krispie Treats

For the snickerdoodle  rice krispie treats:
3 Tablespoons unsalted butter
4 Cups of miniature marshmallows
1 Teaspoon cinnamon
1 Teaspoon pure vanilla extract
6 Cups Rice Krispies cereal

Melt butter in a large saucepan over low heat.  Add marshmallows and stir until completely melted.  Stir cinnamon and vanilla extract into marshmallow mixture.  Remove saucepan from heat.  Mix in Rice Krispie cereal until uniformly coated with marshmallow mixture.  Spread the mixture evenly in a buttered 13x9x2-inch pan.

For the cinnamon frosting:
2 Cups powdered sugar, sifted
4 Tablespoons melted butter
2 Tablespoons milk
1/2 Teaspoon cinnamon

Add melted butter, milk and cinnamon to the powdered sugar.  Beat until smooth and creamy.  Spread onto snickerdoodle Rice Krispie treats.

    mmm! i think I’d prefer them without the frosting too, but they sound and looking ridiculously delicious. I’ve been eyeing a brown butter spice version and plan to make those soon.
