Chocolate chip cookie bars
I have to admit that I was forced into the kitchen today to bake for an event tomorrow. I’m glad it worked out that way, because I found a recipe that not only gets a thumbs-up from my kids, but it starts with a boxed cake mix. So really it was no big deal to mix it together and wait the 20 whole minutes for it to bake. I have a feeling it will quickly disappear from the dessert table tomorrow too. It’s hard to resist mini chocolate chips sprinkled on top of anything, don’t you think? They’re like a magnet. A teeny tiny chocolate magnet. Oh, brother. Can you tell I’m hungry? I think there’s a chocolate chip cookie bar calling my name.
Recipe: Chocolate Chip Cookie Bars
(very slightly adapted from LiveStrong.com)
1 boxed yellow cake mix
2 eggs
1/4 c. packed light brown sugar
1/4 c. melted butter
1/4 c. water
1/2 – 1 c. mini chocolate chips, to your liking
Lightly spray a 9×13 baking pan with nonstick cooking spray and preheat oven to 375 degrees. Combine all ingredients, except chocolate chips, in a mixing bowl. Mix with electric hand mixer at medium speed for 2 minutes. Stir in mini chocolate chips. Transfer batter to prepared pan and spread evenly. Sprinkle top with additional mini chocolate chips, if desired. Bake for 20-25 minutes. Cool completely and cut into squares.
Anything that starts with a cake mix goes straight to the top of the list for me- less ingredients! :)
