Chocolate molten lava cake and our 100th post

How cool to be writing our 100th post!  It’s like the 100th day of school, only I don’t have to wear 100 stickers or count 100 m&ms.  Instead, here’s an awesome recipe and a great giveaway too.

First for the recipe.  What says celebrate like a super rich and gooey chocolate dessert?  That’s what I thought, so I made chocolate molten cakes with marshmallow.  I love this recipe because it tastes absolutely amazing – like I spent forever baking it, but really it only took a few minutes to put together.  You’d never guess it though.  It’s so rich and the flavor is so intense that you need a big glass of something cold to drink when you’re finished.  It’s just a delicious dessert.  And since you make it in ramekins, you get 6 individual little masterpieces.  (**Recipe at the end of this post.**)

And now for the fun giving away part.

We have three awesome prizes to send to one lucky winner.  All you have to do is leave us a comment to have a chance to win.  We’ll use random.org to pick a winner on April 5, so the contest closes at midnight on April 4.

Bea, in all her crafting glory, has made this adorable little porcelain cupcake for whoever wins the giveaway.  Is it sweet or what?  She actually made her own porcelain!  (I know, she really is too much, isn’t she?)  The lid comes off and the cupcake wrapper is hollowed out so you can keep your rings or other little trinkets in it.  That’s a penny next to it in the one photo so you can get an idea of its size.  You’ll also get two cookbooks if you win!  That’s 3….. count them….. 3 prizes to celebrate our 100th post.

Recipe:  Chocolate Molten Lava Cake with Marshmallow

1 1/3 c. semi-sweet chocolate chips

1/4 c. butter

1/3 c. granulated sugar

2 eggs

1/2 tsp. vanilla

1 c. all-purpose flour

6 large marshmallows

powdered sugar, for dusting

In a pot over low heat, melt chocolate chips and butter.  Stir until smooth.  Remove from heat and stir in granulated sugar, eggs, and vanilla until well blended.  Stir in flour.

Fill 6 buttered and floured ramekins halfway with batter.  Press a marshmallow into the center of the batter in each ramekin.  Spoon remaining batter equally over the marshmallows, covering completely.

Place ramekins on a baking sheet.  Bake in a 350 degree oven until the tops are puffed and cracking, about 12-15 minutes.  Allow to cool for 10 minutes.  Run a small knife around the inside edge of each ramekin, and turn upside down to release the cake.  Place cakes right side up on plates and dust with powdered sugar.  Serve warm.

    My family will flip for that recipe- you just can’t go wrong with chocolate and marshmallow.

    And how on earth do you make your own porcelain?! Martha Stewart is crying salty tears of jealousy in her hands squeezed lemonade. Fantastic job!

    Oh, man! That looks FABULOUS!!! I absolutely LOVE anything with marshmallows. Hope you sent that second photo in to tastespotting! I’ve actually seen & printed out the recipe (now lost somewhere) from myrecipes. Thank you for reminding me that I’ve yet to make this.

    Babygirl and I are making your sugar cookie bars tonight (I showed her yours) I think I’m gonna make the full batch. I do have a question; are the bars soft? I ask because I don’t like “cookies” that are hard. I prefer they be soft so wanted to make sure I didn’t need to adjust the time any.

    You know we love you, Michelle–you help keep us motivated!!
    And you know I love your blog, because I read everyday just to keep in touch (I miss our almost daily talks–darn job interfering.)
